One...What is meant by a one string lead? I know it is on one string but is this something that is used alot? Is the lead in the original version of I'm So Glad by Cream a one string lead? Maybe a couple examples?

Two...Leslie West says he is a two finger guitar player. I assume this means he rocks back and forth between two main fingers in a pentatonic pattern, a rather simple style but very effective when played by him.

I suppose so but you could take it to mean only one string at a time. i.e. without any double stops or partial chords.

Sound like me trying to play blues leads :) I'd assume you're about right here unless he's talking about his picking hand that is...
