I know we have at least of couple of guitar teaching gurus on here and lots of others with tons of experience, so can you suggest some good books on music theory, chord construction, etc., as it applies to the guitar (or just in general)?

Hey brother I bought my boys some M.T. books by Bruce E. Arnold.........they were not fun for the boys but I strongly urged them to atleast try and read enough to get something outta them.I made all 3 tell me one thing they got from the books:AOK

Yea im a hard arse at times.............I am just waiting for them to ask me if I read them and what did I learn and or what I know about theory:thwap

Hopefully I wont be quizzed because I know nothing:poke

I jumped at a chance to recommend Cormac McCarthy's The Road when I saw the title only to immediately realize it was about music books :-)

Well The Road is a great book, anyhow. Especially for fathers.

Mark Wein's Foundations for Guitar book is a good primer and is all guitar oriented. I like it, and in combination with the fretboard theory book he also sells on his site, (or you can get it elsewhere), they are a good system for guitar oriented theory understanding, IMHO. I am working through them both myself.
